My friend at work has been eating entire foods and struggling new recipes on her behalf family. She asked me if I knew of a healthy cinnamon-raisin Jammie dodger cupcake recipe of some sort. She got me thinking…

Since I have already been taking in Paleo, I miss things such as cinnamon raisin toast, oatmeal and raisins, and also Raisin Bran. What I must say i needed was that lovely cinnamon-raisin taste without the grains, dairy products and refined sugars.

I came up with this paleo and gluten-free muffin recipe after a few failed attempts to get the ideal cinnamon and raisin flavor I was longing for. The very first batch wasn’t too bad, however, not great. I don’t need to post an average formula on my blog. I really want it to be excellent so you’ll check it out and come back for more! THEREFORE I went back to operate in your kitchen for more experiments and family taste tests.

1 cup of raisins

1 tbs of cinnamon

1/2 tsp of cooking soda

Coconut sugars, cinnamon & extra raisins to sprinkle about muffin tops after baking if desired

Stir all dry ingredients together inside a bowl (except raisins)

The Ultimate Fruits, Mozzarella cheese & Nut Salad

Ingredients

For the salad:

5 oz organic baby spinach or spring greens (about 1 bundle)

2 small organic apples, cut into thin slices

1 cup grapes, sliced up lengthwise

1/4 cup crumbled feta

Instructions

In a small bowl, whisk olive oil, balsamic vinegar, garlic and dijon mustard jointly until clean and well combined.

In a big bowl, toss lettuce, apples and grapes jointly. Pour dressing over the fruits and lettuce and toss again to combine. Top salad with feta crumbles and toasted walnuts. Serve immediately. Salad serves 4.

This salad is most beneficial enjoyed immediately after it really is made. If you are getting it to a celebration, I recommend waiting around to add in the dressing, nuts and feta until right before you serve it.
